Authentic Laksa?
What is authentic Laksa in Singapore?
Some of the laksa offer curried gravy (real curry minus the
chicken), with YELLOW noodles, some with fine strands of mee
boon, and some even offer kway teow in the curried gravy. On top
of this, they put in large chunks of tau pok and fish
balls.
Some offer the Penang version with the clear sour gravy in the same
different option of yellow noodles or fine mee hoon.
The original laksa in Singapore is the nonya-baba style with
the gravy based on coconut milk in spices, slow boiled with
grounded hei bee (dried shrimps), poured over chor bee hoon,
and topped with thin slice of fish meat cakes, cockles, thick wad
of chilli paste, and some green sprinkling of lemon grass
(?).
To each his own one persons dream laksa, is another persons
poison.
